Oven baked banana with cranberry vodka kiss

This is hardly a recipe as such, more of a fun idea, but definitely worth a mention. The last of these long summer evenings are upon us and soon enough barbecues will have become a memory until next year. The perfect way to end an evening in the garden is with a spoon, digging in to a tin foil package of gooey baked bananas with melty chocolate and sprinkles of cinnamon. As the weather cools, make these in a baking dish in the oven. A year round treat.

Cranberry vodka kiss: baked banana with chocolate, serve suggestion: plant based ice-cream (for one)

  • 1 banana
  • 1/2 bar cranberry vodka kiss
  • 1/2 tsp cinnamon
  • 1 tbsp brown sugar or coconut palm sugar
  • Dairy free ice cream, for serving
  • 1. Pre heat the oven to 180C, if not using a barbecue.

    2. Slice the banana in half and arrange slices side by side in a baking dish, or wrapped in tin foil if placing into the barbecue to bake. Stuff the middle with squares of the cranberry vodka kiss bar then sprinkle with cinnamon and sugar.

    3. Bake in the oven or barbecue for 20 minutes or until bubbling, warm and gooey. Serve with a scoop of dairy free ice cream.
