recipe: minty choc mousse pudding pots

There's nothing we like better here at Conscious Chocolate than a little treat for pudding after our dinner in the evenings. Of course, most nights a few squares straight from the bar will do, but sometimes we like to make something a bit more special, more decadent.. something we can devour from a spoon curled up on the sofa with a good book and a cup of tea.

This minty chocolate mousse is the perfect dessert for evenings like those. Light but equally creamy, fresh but just as rich, this little pudding pot has everything you could want.

Mint hint: minty choc mousse pudding pots

  • 300g silken tofu
  • 4 tbsp maple syrup or natural sweetener
  • 2 bars mint hint chocolate
  • 1 tsp vanilla extract
  • Fresh mint, for serving
  • 1. In a high power blender or food processor blend the tofu with the sweeter and vanilla extract.

    2. Melt the bars of chocolate in a glass bowl over a saucepan of simmering water.

    3. Once fully melted, empty the chocolate into the blender and blitz with the tofu mixture until fully combined.

    4. Divide into glass ramekins and place in the fridge to chill and set for at least 2 hours, before serving.
